Make Me Italy designed a guided excursion for its guests to visit the very places where all this happened, an amazing experience through the centuries that begins and ends at Dairy 3030.

Guests can enjoy a tasting experience at our restaurant featuring the Parmigiano Reggiano, a platter of PDO dry-cured meats, the traditional fried dough and Parmigiano Reggiano milk ice-cream.

The history of the most appreciated and world-famous cheese begins almost a thousand years ago.

The creativity of the Cistercian monks in milk processing, the salt mines, and the extraordinary secret of the alfalfa grass led to the birth of casus vetus, the first Parmigiano Reggiano cheese.

What You will visit

The Abbey

Inside the abbey, the Cistercian monk of St Bernard, the inspirer of the Templar Knights, started the craft of making hard cheese to preserve milk for a longtime.

In Fontevivo (Fontevivum), the abundance of water favoured the growth of alfalfa that is still the secret behind casus vetus. A Templar knight is waiting for us in the abbey to reveal it!

3030 in Medesano

The abbey was also a farm, called grangia, whose modern example is the 3030 in Medesano, owned by the president of the Consortium of Parmigiano Reggiano, where we will see the great-granddaughters of the monks’ cows up close.

Guido Cainelli, cultural storyteller, food tour leader and environmental hiking guide, will guide you through this unique experience.
